Advanced education opportunities for the confectionery industry


The confectionery industry is constantly innovating and transforming. New trends, technologies and consumer needs require continuous adaptation and improvement of production processes and products. In order to remain competitive and to be successful in the long run, it is therefore of essential importance to train employees on a regular basis.

The ZDS – Central College of the German Confectionery Industry e. V. is offering a variety of different continuing education courses for the confectionery industry in on-site and web seminars for the coming months. The English language intensive courses cover the areas of chocolate and confectionery production.

In the three-week practical course “Chocolate Manufacturing”, scheduled from 26 June to 14 July 2023, the focus is chocolate. The workshop will cover processing from bean to cocoa mass, as well as optimized tempering and moulding to tablets and filled chocolates.

The “Industrial Sugar Confectionery Production” practical course provides a wide overview of sugar confectionery. Participants are taught raw materials, ingredients and corresponding production techniques in detail.

Interested participants can attend the introduction course to industrial ice cream production in English language (11 to 14 July 2023) and in German language (4 to 6 October 2023). Participants will deal with raw materials, process parameters and production technology. In practice, ice cream masses are produced on batch and continuous machines.

The “Inter Praline” congress (6 to 7 December 2023), completes the ZDS seminar programme. At this event, various stakeholders from the entire chocolate and praline industry will use the ZDS network for intensive exchange.
