ZDS annual programme 2023 offers a colourful bouquet of topics


The ZDS, Central College of the German Confectionery Industry, has published its annual programme for 2023. Around the year, a total of 30 workshops, web seminars, trainings and congresses are offered multilingually. As usual, exciting topics from all areas of the confectionery industry will be in focus, as well as innovations in product development, proven and trendsetting processes, but also “hands on” workshops. Here, participants can put the knowledge they have acquired directly into practice in the outstandingly equipped technical facilities of the ZDS Academy of Sweets.

In analogue and digital seminars, current trends as well as basic knowledge are shared with the participants, thus generating sustainable qualification of the employees. One example is the web seminar issued in English on the topic “Protein Bars: Milk-based and Plant-based Technology” from 22 to 23 February 2023, which deals with the production technology and raw materials of protein bars.

The course “Introduction to the Compound and Fat-based Fillings Technology” with theoretical and practical parts will discuss topics like a market overview, fat-based crèmes and fillings, production processes as well as compound fats like CBE, CBR and CBS.

ZDS classics include practical training courses such as “Pan Coating” in March (13.03. to 17.03.), as well as the intensive courses “Chocolate Manufacturing” in June/July (26.06. to 14.07.) and “Industrial Sugar Confectionery Production” in August (14.08. to 25.08.).

At the end of the year, the international praline congress “Inter-Praline” can be marked in red in the calendar. From 6 to 7 December 2023, it will take place as a platform for the multifaceted chocolate and praline industry in the ZDS Academy of Sweets.
