Baked-on dough and fat residues removed in no time at all

Friedrich Bäckerei-Zubehör company cleans used baking stations with the innovative steam vacuum cleaner Blue Evolution XL+ from Beam. This allows even very stubborn soiling to be removed without leaving any residue – and without using any chemicals at all.


Used baking stations that can be cleaned faster than ever and look like new afterwards? This is possible – as Friedrich Bäckerei- Zubehör GmbH from Solingen/Germany shows. The company not only develops and produces new deck baking ovens, but also sells used baking stations. The specialists at Friedrich reprocess these using, among other things, the HACCP-certified Blue Evolution XL+ steam vacuum cleaner from Beam GmbH in Altenstadt/Germany. The innovative device from the Bavarian quality manufacturer completes four work steps in one and saves the Friedrich team a lot of time. At the same time, it ensures top hygiene and dissolves even baked-on dough and fat remnants without leaving any residue – and all without the use of chemicals.

“I am really enthusiastic about the Blue Evolution and can recommend the steam suction system to any bakery. Its cleaning result is unbeatable. We haven’t achieved this with any other device before,” says a delighted Frank Tichter, Managing Director of Friedrich Bäckerei-Zubehör, adding, “What’s also great, of course, is that the Blue Evolution saves us around 80 percent time. Thus, we manage to clean significantly more used ovens and were even able to increase our sales in this business area.”

For more than twenty years, the company has been manufacturing innovative deck ovens that impress in practice with their baking results, ease of handling and their plus in energy efficiency. In close dialogue with bakers and confectioners, Friedrich Bäckerei-Zubehör continuously develops its baking stations and also offers them as individual custom-made products. In addition, used baking ovens that have been thoroughly cleaned and overhauled are available.

“Although the machines are all fully functional and technically in mint condition, some of them arrive at our premises very dirty,” reports Frank Tichter. “Before we had the Blue Evolution XL+, we even had to dispose of them in the worst case. Baked-on dough and fat residues in particular were almost impossible to be removed with other devices or via conventional cleaning with a cloth and brush. With the Beam steam vacuum cleaner, we now really get every baking station sparkling clean and even manage to clean even more used ovens – there are now over hundred a year.”

The multifunctional device steams, wipes, vacuums and kills germs in a single operation, without the use of chemicals. The Blue Evolution is filled exclusively with clear water, works with hot dry steam at up to 180 °C and thus removes even very stubborn soiling without leaving any residue. According to the manufacturer, the steam vacuum cleaner meets the highest hygiene requirements. It complies with the strict HACCP standard and also impresses in the 4-field test. Germs and bacteria are killed at a rate of 99.9 % and viruses are effectively inactivated. “This value proves it in black and white: No chemicals are needed for efficient cleaning,” emphasizes Beam Managing Director Robert Wiedemann. “This pays off in the food industry in particular – after all, who wants to process or store food in the same place that was previously cleaned with aggressive agents? With our Blue Evolution, bakers and confectioners no longer have to take any risks when it comes to residues of cleaning agents or even allergens.”

In addition to top cleaning performance, a particularly gentle way of cleaning is also important for Frank Tichter: “For the most part, we have black baking stations made of anodized stainless steel in our range – whether new or used. So, it’s really great that the Blue Evolution XL+ works with hot dry steam and cleans the surfaces particularly gently.” And that’s not all: With the steam vacuum cleaner from Altenstadt, large surfaces can be cleaned just as well as hard-to-reach places such as corners, cracks and edges. This is made possible by the more than 3 m long hose and the various attachment nozzles. Four free-moving swivel castors also make the Blue Evolution XL+ very flexible and easy to handle.

With the benefits mentioned, it is no wonder that Beam is conquering one industry after another with its Blue Evolution series – including food production. The steam vacuum cleaners are considered the benchmark when it comes to efficient and chemical-free cleaning.

Depending on the requirements, the user can choose from three variants: The Blue Evolution S+ offers an output of 3,500 W and operates at a pressure of up to 8 bar and a steam temperature of up to 170 °C. The Blue XL+ with power connection presents itself as a powerhouse, operating at 7,200 W, up to 10 bar and up to 180 °C. For efficient machine cleaning, Beam also offers the Blue Evolution XXL. The steam cleaner operates at 18 kW, a pressure of 10 bar, and a minimum of moisture, so ball bearings, deflection rollers and chain drives are protected.

Both, the Blue Evolution S+ and the Blue Evolution XL+ have a robust stainless steel housing and four free-moving swivel castors. The multifunctional systems also have various attachment nozzles, and their steam pressure can be regulated to clean all surfaces thoroughly and gently.

Another plus point in practice: All models have an additional hot water module for very stubborn soiling. As a special feature, they also have a blue light effect that leaves germs no chance: The dissolved dirt particles end up in the water filter and are bound in the water. Then, the germs contained therein are killed by the UV blue light.
