Under the heading “The rise of fortified gums & jellies – holistic market overview from recipe development to production technology”, for the first time, a symposium on the production of OTC confectionery took place recently in Aachen/Germany. The organizers, D&F Sweets, Norevo and Winkler and Dünnebier Süßwarenmaschinen (WDS), invited a targeted audience from the confectionery industry to gain an overview of raw materials and product development, processing and packaging technologies, market trends as well as legal (GMP) aspects in 19 specialist presentations by international experts. The audience as well as the speakers took advantage of the breaks and the evening dinner for extensive networking. The theoretical part was rounded off on the second day of the symposium with a live demonstration at the D&F Sweets laboratory.
The symposium was the first of its kind to bring together the fledgling OTC confectionery community. The event, which was originally scheduled to take place after ProSweets Cologne trade fair in January 2022, has been postponed due to the pandemic. It was all the more gratifying that more than 100 registered participants attended the symposium even without the connection to a trade fair.
An anonymous survey resulted in consistently positive feedback on the event. After the long period of online conferences, the personal contact with each other was appreciated by all participants. After the successful implementation of the symposium, the organizers are now discussing ideas and topics for further events.
