The seminar “Future of Confectionery: Ingredients for Sweets”, organized from 28 to 29 April 2020 by the ZDS – Central College of the German Confectionery Industry, will deal intensively with the topics of food pairing, reformulation, and protein or fibre fortification. In the case of hemp as a trend raw material, the seminar shall take a look at the North American markets and benefit from the experience there.
A further topic is the legal basis and the general conditions for the processing of new raw materials. The seminar is rounded off by lectures on biochemical and physical process steps.
In process and packaging technology, the focus will be on resource preservation. The increasing digitalization in this area will gain in profile, especially as an instrument for cost reduction.
The confectionery industry in particular, with its high demands in the area of barrier properties for packaging materials, the resealability of convenience products and the high aesthetic requirements for gift packaging, will be able to evaluate new and interesting solutions in the upcoming years. Following Interpack trade fair, the seminar “Future of confectionery packaging” will be held at ZDS from 16 to 17 June 2020.
