Dear readers,

By Dr. Bernhard Reichenbach, Chefredakteur

The system “writes significantly better than the majority of my students have in recent years.” This is what a computer science professor says about the text robot ChatGPT from the start-up company OpenAI. It is a prototype of a chatbot, a text-based dialogue system based on artificial intelligence (AI). The text robot can imitate human responses, conduct dialogues and write meaningful, qualitatively passable texts.

AI can also play an important role in the production of confectionery and baked goods. This is demonstrated by an AI-supported optical inspection system that the image processing specialist Bi-Ber has put into operation at the confectionery manufacturer Loacker. It relieves the employees and enables particularly reliable quality assurance.

High quality is also the focus of this issue’s special section on “Healthy Baking”. Among other things, a resistant wheat starch from the ingredient specialist Loryma is presented, which can increase the fibre content in baked goods such as muffins or yeast plaits.

The efficient wrapping of hard sweets is one topic of the “Packaging” section. For this task, the confectionery manufacturer PEZ International was looking for a fully automatic packaging system. A new development from SACMI Packaging & Chocolate meets all the requirements.

After the packaging comes the labelling: Bluhm Systeme offers future-oriented, investment-safe labelling systems for small to large companies. We present the supplier’s corresponding solutions for the confectionery and bakery industry.
