DTM Print and Primera presented innovative printing solutions

The two companies showcased the Eddie food printer and the new product Freddie, the Frosting Machine. Eddie is an EU and FDA approved food printer that uses edible ink to print colourful images, text and logos on biscuits, sweets, macarons and white chocolate. It is used worldwide to create personalised food products for private and corporate events.


Direct printing means there is no coating on the food and no unpleasant aftertaste that could affect the quality of the products. The edible ink fulfils all EU and FDA standards for use as a food additive, while the ink cartridge itself complies with cGMP standards and the entire manufacturing and cartridge filling process is also FDA-compliant and cGMP-certified. In addition, the edible ink is kosher certified, halal and vegan.

As the edible ink dries quickly, the printed sweet treats can be sold immediately after printing. The print results are impressive with their brilliance and vibrant colours, making Eddie a professional and efficient solution for finishing food for bakers, confectioners and chocolatiers.

In addition to Eddie, its counterpart Freddie was also on show at the trade fair in Düsseldorf. Freddie is a new machine for the automatic application of frosting and Royal Icing. Like Eddie, Freddie is also certified by the NSF. It uses a vision system called FreddieVision and IR distance sensors to analyse the texture of individual icing recipes and the surface characteristics of each biscuit. This technology allows Freddie to calculate the exact amount of icing and its precise placement, eliminating the need for manual alignment or positioning. A digital photo is taken of each biscuit. This allows Freddie to precisely define the contours for perfect icing.Freddie can be operated in carousel and manual mode, with carousel mode offering the most efficient production. The carousel can process up to 12 biscuits at a time. The six NSF-certified trays also included are suitable for non-uniform and larger biscuits of up to 13 cm. Royal Icing is filled into a large syringe and then automatically applied to the biscuits. Freddie takes approx. one minute for one biscuit. Depending on the texture of the frosting, one syringe filling is enough for about 36 biscuits with a diameter of 8 cm.

In combination with Eddie, both machines optimise the decoration of biscuits: Freddie applies the frosting, while Eddie prints images and logos directly onto the glazed biscuits. This synergy speeds up production, reduces labour costs and enables bakeries and confectioners to produce high-quality decorated biscuits individually.
