Austrian company Esarom, known in the confectionery industry as the “Partner in Taste”, is also a partner of Winkler und Dünnebier Süßwarenmaschinen GmbH with effect since May 2015. The two leading companies offer confectionery manufacturers two important components as a package for their successful products: technology and taste. Therefore a WDS laboratory depositor is installed at Esarom in Oberrohrbach near Vienna. A variety of products can be manufactured here in small quantities, but the process used is identical to the process used in large production equipment: Chocolates, fruit gums, jellies, hard candies, soft caramels, fondants, toffees etc., with up to three different mixtures at the same time. All the mixtures that can be poured and broken off can be precisely processed. How do confectionery manufacturers benefit from this collaboration? The production process and the taste can be simultaneously “played around with” and both can then be directly matched. This is ideal to figure out the best combination and the perfect parameters. The whole team can work together: Confectionery technologists, flavourists, plant manufacturers and the confectionery manufacturers work together, at the same time and at same place. This saves time, speeds up the product development and brings innovations faster to the market.
